Irish Beer and Bacon Muffins

  • 6 slices bacon, chopped
  • 2 cups onions, chopped
  • 3 tsp sugar, divided in half
  • 1/4 tbsp thyme
  • 1 1/2 cups grated Parmesan cheese
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup light lager
  • 2 eggs
  • 1/4 cup extra virgin olive oil
    1. Preheat oven to 375 degrees.  Grease 12 standard muffin tin.
    2. Cook bacon in large skillet over medium heat until crisp.
    3. Remove bacon to paper towels. Add onions, half of the sugar and thyme to skillet. Cook until onions are golden brown, stirring as needed.
    4. Cool and add bacon to skillet.
    5. Combine flour, cheese, baking powder, salt, and remaining sugar in a large bowel. Whisk to mix.  Whisk lager, eggs, and oil in another bowl. 
    6. Add the flour mixture, stirring until moist.
    7. Stir in onion and bacon , mix thoroughly.  Spoon batter into muffin cups.
    8. Bake 15 minutes or until toothpick inserted comes out clean. Cool in the muffin tin.  Serve warm.  Makes 12 muffins.
