Irish Fairy Cakes

 Irish America Fairy cakes are favorite just like hot cross buns in March. Fairy cakes have magical properties besides enabling you to see fairies it will also heal the sick, but only if baked on the day. In America though, you will know these as cupcakes!


  • 1 stick of butter
  • 2⁄3 cup sugar
  • To eggs, beaten
  • Grated rind of 1 orange
  • 1⁄2 Teaspoon vanilla Extract
  • 3⁄4 Teaspoon baking powder
  • 1 1⁄4 Cups flower
  • 1 tablespoon milk
  • 1⁄3 cup sultons

 Sugar icing

  • 2 cups powdered sugar
  • 2 tablespoons water boiling


  1. Cream the butter and sugar together until light and fluffy. Beat in eggs, vanilla, and orange rind. Shift the baking powder and flour together and add to the butter mixture. Add a little milk to created batter of dropping consistency. Fold in the saltons and spoon to mixture into well greased muffin pans cups. Bake at 375° for 25 minutes. Drizzle on sugar icing and serve.

 For sugar icing, combine powdered sugar and boiling water.
