Summer BBQ Mini-series: Beef Brisket

Summer is coming up and that means its BBQ time! Hanging out in the sun and the grill going with your favorite meats. Laughter of your children playing. Ice cold lemonade to cool them off before you sit down to a delicious feast. In this summer mini-series, we will be bringing you different kinds of meats to throw on the grill and enjoy. First up is a mouthwatering brisket! So, let’s send out the neighborhood invites. You prepare the meat and have your guests bring the sides. Everyone can hang out and enjoy.

Beef Brisket

First, we make the rub.

  • ½ cup kosher salt
  • 3 tablespoons coarse ground black pepper
  • 2 teaspoons cayenne pepper

You will need 1 (9-11 pound) brisket, untrimmed and 1 bottle of beer.

Prepare the rub by combining all ingredients in a bowl and mix well.

Next, preheat your grill to 225 degrees. Generously sprinkle the rub on all sides of the brisket. Pour beer into a drip pan and place on the far-left corner of the cooking grates. Place brisket, fat side up, in the center of the over a drip pan. Grill for 5-8 hours, depending on the size of the brisket or until the meat thermometer registers 185- 190 degrees in the thickest part. Remove from grill and let rest for at least 20 minutes. Slice thin and serve warm.
