Deck Picnic with Chicken Salad

Spring is in the air. The smell of freshly bloomed flowers is all around us. It’s a great time to have a picnic. You don’t necessarily have to go to a park and lay out a blanket to have one. You can go out onto your deck and enjoy your picnic there. Safely distant away from others, especially during these pandemic times. Fruits and veggies and simple sandwiches are the key to a perfect deck picnic. You don’t have to go all out and make a big feast. I love chicken salad. You can eat it as a sandwich or with crackers or even by itself. There are many ways to make it. I love it on a croissant with fresh strawberries and lemonade. This is the recipe I like the most. It’s a little bit different than the traditional way of making it but it is so delicious.


  • 4 cups cooked, chopped chicken
  • 1 cup celery, chopped
  • 1 cup red seedless grapes, halved
  • ½ dried cherries
  • 1 cup mayonnaise
  • ½ teaspoon salt
  • ½ teaspoon salt


Add chopped chicken to a large bowl with celery, grapes, dried cherries, mayonnaise, salt, and pepper. Stir together until combined. Serve on bread as a sandwich or with your favorite type of crackers.
